Turkish coffee Use a brass Turkish coffee grinder to obtain a really fine powder; these objects can easily be found in shops nowadays. if not available, use an alectric coffee grinder to powder the beans and then sleve the ground coffee. For each person, pour a small cup of water, two teaspoons of coffee and two of sugar into a special Turkish coffee pot (a copper jug with a wide base, narrow neck and long handle). After having stirred well, put the mixture to boil over a low flame; when it boils it will rise up and a dense creamy froth will form on top, remove from the heat until the rich cream disappears. Repeat this procedure three times and then take it off the heat completely. Now, as if it were a ritual, share out a part of the dense froth into each of the guests' cups, then slowly add the remaining coffee and the Kaimtk or thick froth will come to the top. The drink must never be stirred in the cup. Before offering to friends, make the kaimtk disappear again into the bottom of the cup by delicately pouring a couple of drops of cold water on top it. Now this superlative flavoursome drink is ready.
